How to choose a good watermelon?

A good and ripe watermelon should be large, yet light. During the ripening of watermelon, its density decreases. If it is small and heavy, it means it is not ripe yet.

Unripe watermelon retains 2,5 times more nitrates than ripe watermelon. This means that an average of 1 kg of watermelon contains 200 mg of nitrate. The danger of nitrates is that it binds to hemoglobin in the blood, preventing it from carrying oxygen. As a result, metabolism, central nervous system, immunity, liver function are impaired. Children are especially sensitive to nitrates.
