Blinchik (infusion) is a pastry made by frying liquid dough in a hot pan. There are many ways to make pancakes, but all of them are based on one common recipe, which is a milky liquid dough. Ready-made pancakes can be eaten with various fillings. These include: jam, cottage cheese, minced meat, melted chocolate, sliced pieces of fruit, especially bananas.
PREPARATION OF INSTRUCTION AT HOME
This article will cover two different methods of cooking pancakes, namely the recipe for baking using milk and yogurt.
METHOD 1 OF MAKING BLINCHIK: MILK RECIPE
Required products:
Milk - 1 liter;
Eggs - 3 pieces;
High-grade flour - 500-600 g (the dough should be in the form of liquid cream);
Sugar - 1 tbsp (more or less solsa depending on taste);
Salt - 1 teaspoon without filling;
Baking soda - 1 teaspoon;
Vinegar or lemon juice to kill soda - 1 tbsp;
Moy.
Preparation:
Put the milk in a deep bowl.
Beat eggs in milk and mix well.
Kill baking soda with vinegar or lemon juice, put it in a milky mass and mix.
Add sugar, salt and flour to the mass and mix well until no lumps remain. It is better to use a whisk or mixer.
Finally add 7-8 tablespoons of oil to the prepared dough and mix well. You do not need to grease the pan every time the oil is added to the dough.
Put a spoonful of liquid dough in a heated pan, roll it out into a round shape and fry on both sides.
The pancake is ready. You can consume it as you wish.
RECIPE 2 FOR MAKING BLINCHIK: METHOD OF PREPARATION WITH YOGURT
Ingredients:
Yogurt - 500 liters;
High-grade flour - 500 gr;
Eggs - 3;
Baking soda - 1 teaspoon;
Salt - 1 teaspoon;
Sugar - to taste;
Boiling water - 1 cup
Moy.
Preparation process: step by step
The yogurt is poured into a deep bowl and topped with eggs, sugar and salt and mixed well.
Add flour to the yoghurt mass and mix until no lumps remain. The dough becomes very thick. Don't worry, it has to be that way.
Put baking soda in a glass of boiling water and stir.
Pour this water over the thick dough and mix well at speed. Our dough becomes a liquid creamy state.
Then we add oil to it and stir again.
We fry in a hot pan.
Our infusions are ready. The pancakes prepared according to these recipes are very tender and crispy. Pleasant appetite!
PS The first dough in the pan (sometimes the second and third as well) can stick to the pan and tear. Don't worry about it. This is often the case until the pan is well heated and greased with the oil in the dough. Keep cooking and you will definitely make it!
